I think baking Éclair is similar to Baguette.
Simple ingredients & procedures, but difficult to make well.
I wanted to see if I could bake nice Éclair in my oven!
Usually, I use the convection oven to bake Pâte à Choux, but it came out really well with my regular home oven!
I was very happy with this result :-)
This time, I decided to make the green tea cream for the filling and added a little bit of the dark rum into the green tea cream.
Trust me! The dark rum goes well with the green tea!
It gives the cream a ton of flavorful kick!

Pâte à Choux
Makes 10 pieces Éclair

4 – 5 pieces Eggs
120 g Butter
140 g Milk
140 g Water
3 g Salt
6 g Granulated Sugar
160 g Flour
Crème Pâtissière
——————————-
200 g Milk
60 g Granulated Sugar
40 g Egg Yolks
16 g Flour
8 g Butter

Like them?…LOVE THEM! My daughters are Korean food addicts and adore green tea in all of it’s forms. I pinched some green tea powder from the last time I was visiting and have it cribbed away safely for just such an amazing recipe as yours that just might rock my culinary world…I am drooling just thinking about them and you can be assured that even in my busy world, I will probably go to sleep tonight thinking about them…obsessed? “Moi?”… ;)

I’ve never made eclairs, but I am a fan of pâte à choux. Love how it puffs. These eclairs look great. I too would like to take a look at the recipe for this green-tea pastry cream.

What’s the baking temp to bake these eclairs if I use a convection oven? Thank you!!
Hi Rebecca, thanks for your comment! I can’t tell the accurate oven temp because it depends on what kind of oven do you use, but please try between 325 – 350°F. When the dough gets well expanded, you can lower the temp around 300°F.
